Highland Park Distillery heavy on the Norse mythology in their bottle design, marketing, and language: “Viking Honour”, “Viking Heart” and “Viking Pride” are amongst some of their age stated bottling taglines. It’s a really attractive angle too, when thinking about the fractious history of the Orcadian people that flows through this distillery and into the spirit of the gods. To celebrate the opening, Scapa is launching a new addition to its Distillery Reserve Collection, The Cask Finished Edition, Scapa 19-Year-Old Pedro Ximénez hogshead finish. Designed by a local Orcadian architect Mark Fresson, with interiors by Florian Dussopt, the tasting room pays homage to the traditions and crafts of the Orkney islands.The distinctive clifftop location overlooking the natural harbour of the Scapa Flow and dramatic Orcadian landscape makes the Scapa Noust a truly special location to taste whisky. It’s certainly not the first place I’d think of, if I ever were to think of starting a distillery. Islands are formidable places by default, owing to weather, tides, isolation. But even places like the Isles of Barra and North Uist are in the early stages of converting — or enhancing — their gin production to include whisky. Excerpt: The taste is rich, buttery, and fruity with notes of peaches, pears, subtle spice, and hints of vanilla and lemon zest. The finish is long, fruity, and light. Excerpt: More peaches on the palate, with tinned pear and a little honey. Tingling spices in the drying finish, which soon becomes quite bitter – detracting from the overall balance. At first glance, it’s a bit weird that the stuff that gets whisky exciter motors purring is only available if you trek up to the distillery and get it, but then I realise that it’s probably the exact right thing to do: folk who don’t care that much get to buy the middle-of-the-road stuff online or at their local shop. The folk that really care will likely journey up there anyway, so why not have the more potent stuff in the distillery shop? But that also comes with the pitfall of excluding a lot of whisky exciters who can’t get to Orkney but might shout the most about your products. This April, Scapa Distillery in Orkney is opening its new and intimate whisky tasting room, the Scapa Noust. The Scapa whisky distillery had been distilling since long before, having been founded by Macfarlane and Townsend in 1885. The little huddle of buildings lies just outside of Kirkwall at Scapa Bay, and the distillery draws its waters from the Lingro Burn. Scapa distillery is decidedly small with a total capacity of one million litres annually, though the distillery runs at roughly one third of this with a staff of just three, working three days weekly. Hiram Walker acquired the distillery in 1954 and installed a Lomond still a few years later to replace the wash still. The Lomond still is a comparatively recent innovation and produces a heavier, oilier spirit.
